Students run all aspects of restaurant

Carrie's restaurant has turned the fourth floor of the professional building into an unexpected dining destination this fall. Though it is not a place you would expect to find a comfortable sit down restaurant, Carrie's provides a great atmosphere, unique menu, and affordable prices to students, faculty and people in the community.
The menu includes things such as sautéed ancho tilapia and a turkey sandwich with cream cheese and brie spread.
According to Abbe Ehlers, one of the class instructors, the students were in charge of the menu from the beginning.
"On the first day of class, they get the assignment to start working on their own unique recipes," Ehlers said. "We try to guide them towards what will work the best and what will not. Then they present their ideas to each other and vote on the ones they want."
If you are looking for a simple hamburger and french fries on the Carrie's menu, you will probably find nothing of the sort. If you are looking to find something out of the ordinary or try something new, then Carrie's will provide just that. However, the menu is not overly extensive offering only one appetizer and one dessert option.
Prices for entrees range from $5.75 to $7.50.
The goal of Carrie's is to give students the chance to experience running a real restaurant.
"What we guide them through is exactly what they would experience if they opened their own small restaurant," Ehlers said. "It's an opportunity for them to take risks in a controlled environment."
Some students said that the class provides them with priceless experience they couldn't receive in a classroom setting.
"We are putting what we learn into practice at Carrie's," senior Mackenzie Finnegan said. "We put in a lot of extra work and time in and get really involved with the restaurant and help make managerial decisions."
